1. Water pollution & Water Conservation.

1.1. our kitchens severely affected by water pollution in rivers and dams as the scarce recourses ie fish supply is getting more expensive as it has there increasing competition with and short supply so prices are rising.

1.2. the poor water conservation effects our kitchens in that in the future the water restriction and getting stricter and the running of good hygiene gets affected as with less water supply maintain proper levels of hygiene becomes difficult.

1.3. Water conservation plays a crucial part in kitchen environment * the use rainwater harvesting tanks to perform functions such as all major kitchen cleaning and save tap-water for cooking and drinking * performing full load kitchen cloths at the end of the day* the use of sink stoppers where we can save soap water for re-use and rinse separately to save water.

2. Climate Change and air pollution

2.1. the severe droughts experienced, affects the kitchen environment in that, water is the most critical resource cooking, hygiene & consumption in various forms brings a high rise in kitchen running costs.

2.2. climate negatively affects our kitchens in that the agriculture crops is damaged at extreme cliamte changes thus the supply costs are raising.

3. Waste Management

3.1. the poor waste management systems by the municipalities affects our kitchens in that there are some Durban areas already warning that tap water is no longer safe for direct consumption, our kitchens need to spend more time and money cleansing the same tap water.

3.2. effects of damages to sewer infrastructure courses major pollution to rivers and callapses ecosystems IE it kills fish species

3.3. the management of rubbish in our professional kitchens * by means of separating waste into recyclable and non recyclable * used cooked oil to be properly sold to reputable companies for recycling purposes * the separation of wet and dry waste, and making use the wet waste for worm farming and the uncooked food waste for pig farming.
