2.1. - Provide acidity -chelating agents - gelatinizing & coagulating agent - buffer
3. Examples
3.1. Citric acid -sour taste linger when + fumaric acid
3.2. Fumaric acid -strong sour taste
3.3. Acetic acid - distinct vinegar flavour, pungent smell
3.4. Lactic acid -does not have strong smell
3.5. Malic acid - slightly more acidic than citric aicd
3.6. Tartaric acid - strong & sharp sour taste
